King Salmon, also known as Chinook, are the largest of the salmon species. It's not un-common for us to catch kings in the 30-40 pound range, with the largest we've caught in excess of 60 pounds! Wild King Salmon are prized for their high oil content, a natural source of Omega-3 fatty acids. King salmon have a wonderful rich taste paired with a delicate, moist texture.
